Fried chicken with wine sauce recipe

Ingredients (nutrition)

  • 1 oz butter
  • 1 1/2 tablespoons vegetable oil
  • 6 chicken breasts
  • 8 oz button mushrooms
  • 7 oz button onions
  • 6 oz chopped rindless streaky bacon
  • 12 fl oz red wine
  • 3 fl oz brandy
  • 1 1/4 pt chicken stock
  • 4 tablespoons redcurrant jelly
  • salt and ground black pepper to taste

Preparation (instructions)

  1. Preheat oven to 300 degree F.
  2. Melt butter and oil in a frying pan.
  3. Stir in chicken and cook in for 6 minutes under medium heat.
  4. Remove from pan and place in a baking dish in the oven to finish cooking.
  5. Meanwhile, make the sauce by adding mushrooms, onions and bacon in a frying pan.
  6. Cook until golden brown and set aside.
  7. Pour wine, brandy, stock and redcurrant jelly.
  8. Bring to boil and allow to cook for 20 minutes.
  9. Return chicken, mushrooms, onions and bacon to pan.
  10. Bring to boil and season well with salt and pepper.
  11. Serve hot.
