Ingredients (nutrition)
- 1 oz butter
- 1 1/2 tablespoons vegetable oil
- 6 chicken breasts
- 8 oz button mushrooms
- 7 oz button onions
- 6 oz chopped rindless streaky bacon
- 12 fl oz red wine
- 3 fl oz brandy
- 1 1/4 pt chicken stock
- 4 tablespoons redcurrant jelly
- salt and ground black pepper to taste
Preparation (instructions)
- Preheat oven to 300 degree F.
- Melt butter and oil in a frying pan.
- Stir in chicken and cook in for 6 minutes under medium heat.
- Remove from pan and place in a baking dish in the oven to finish cooking.
- Meanwhile, make the sauce by adding mushrooms, onions and bacon in a frying pan.
- Cook until golden brown and set aside.
- Pour wine, brandy, stock and redcurrant jelly.
- Bring to boil and allow to cook for 20 minutes.
- Return chicken, mushrooms, onions and bacon to pan.
- Bring to boil and season well with salt and pepper.
- Serve hot.
