Ingredients (nutrition)
- 8 Cornish game hens
- 12 crushed garlic cloves
- 4 tablespoons chopped oregano
- 7 fl oz red wine vinegar
- 1/4 pt olive oil
- 7 oz dried apricots
- 7 oz pitted prunes
- 5 oz pitted green olives
- 2 oz capers
- 8 bay leaves
- salt and ground black pepper to taste
- 6 oz brown sugar
- 8 fl oz dry white wine
- 4 tablespoons chopped parsley
Preparation (instructions)
- In a large mixing bowl, mix well hens, garlic, oregano, vinegar, olive oil, apricots, prunes, olives, capers, bay leaves, salt and pepper.
- Cover with cling film and chill for at least 24 hours.
- Preheat oven to 350 degree F.
- Place hens in roasting tins with marinade on top of the hens.
- Sprinkle brown sugar and pour wine on top.
- Roast for 1 1/4 hours.
- Transfer to serving platter and garnish with parsley.
- Reserve pan juice in a sauceboat.
- Serve hen with sauce.
