Ingredients (nutrition)
- 4 oz soften cheese flavored with herbs and garlic
- 4 skinless chicken breast fillets, slit horizontal to form a pocket
- 8 slices Parma ham
- 5 fl oz chicken stock
- 5 fl oz red wine
- 1 oz Demerara sugar
Preparation (instructions)
- Spoon cheese into chicken breast pocket.
- Wrap 2 slices ham around each chicken breast and secure firmly with string. Set aside.
- Pour stock and wine in a large saucepan.
- Bring to boil and add sugar.
- Stir well to dissolve sugar and add chicken.
- Leave to simmer for 15 minutes until chicken is tender.
- Remove chicken from the pan, set aside and keep warm.
- Reheat the sauce and boil until sauce thickens.
- Remove string from chicken and cut into slices.
- Pour sauce over chicken and serve with salad and baked potatoes.
