Garlic chicken with herbs recipe

Ingredients (nutrition)

  • 4 oz soften cheese flavored with herbs and garlic
  • 4 skinless chicken breast fillets, slit horizontal to form a pocket
  • 8 slices Parma ham
  • 5 fl oz chicken stock
  • 5 fl oz red wine
  • 1 oz Demerara sugar

Preparation (instructions)

  1. Spoon cheese into chicken breast pocket.
  2. Wrap 2 slices ham around each chicken breast and secure firmly with string. Set aside.
  3. Pour stock and wine in a large saucepan.
  4. Bring to boil and add sugar.
  5. Stir well to dissolve sugar and add chicken.
  6. Leave to simmer for 15 minutes until chicken is tender.
  7. Remove chicken from the pan, set aside and keep warm.
  8. Reheat the sauce and boil until sauce thickens.
  9. Remove string from chicken and cut into slices.
  10. Pour sauce over chicken and serve with salad and baked potatoes.
