Garlic & lime chicken recipe

Ingredients (nutrition)

  • 4 large skinless chicken breast fillets
  • 2 oz garlic butter
  • 3 1/2 tablespoons chopped coriander leaves
  • 1 1/2 tablespoons vegetable oil
  • grated zest and juice of 2 limes
  • 1 oz Demerara sugar

Preparation (instructions)

  1. Pound chicken using a rolling pin to flatten it. Set aside.
  2. In a mixing bowl, combine garlic butter and coriander.
  3. Spread over chicken, roll up and secure with a cocktail stick.
  4. Heat oil in a wok.
  5. Add chicken and cook for about 20 minutes.
  6. Remove chicken and transfer to a chopping board.
  7. Cut each chicken roll into slices. Set aside in serving plates.
  8. Add lime zest, juice and sugar to wok until sugar dissolves.
  9. Spoon lime sauce over chicken.
  10. Serve with aromatic rice.
