- 4 large skinless chicken breast fillets
- 2 oz garlic butter
- 3 1/2 tablespoons chopped coriander leaves
- 1 1/2 tablespoons vegetable oil
- grated zest and juice of 2 limes
- 1 oz Demerara sugar
Preparation (instructions)
- Pound chicken using a rolling pin to flatten it. Set aside.
- In a mixing bowl, combine garlic butter and coriander.
- Spread over chicken, roll up and secure with a cocktail stick.
- Heat oil in a wok.
- Add chicken and cook for about 20 minutes.
- Remove chicken and transfer to a chopping board.
- Cut each chicken roll into slices. Set aside in serving plates.
- Add lime zest, juice and sugar to wok until sugar dissolves.
- Spoon lime sauce over chicken.
- Serve with aromatic rice.
