Ingredients (nutrition)
For Grilled Chicken
- 4 skinless chicken breast fillets
- pinch of celery salt
- pinch of cayenne pepper
- 2 1/2 tablespoons vegetable oil
For Salsa
- 10 oz watermelon
- 6 oz cantaloupe melon
- 1 finely chopped red onion
- 2 chopped green chilies
- 2 1/2 tablespoons lime juice
- 4 1/2 tablespoons chopped coriander leaves
- pinch of salt
Preparation (instructions)
- Preheat grill to medium.
- Season chicken with celery salt and cayenne pepper.
- Brush with oil and grill for approximately 15 minutes.
- To make the salsa, remove rind and seeds from melons.
- Dice melons flesh finely and place into a mixing bowl.
- Add onion and chilies.
- Stir in lime juice, coriander and season well with salt.
- Serve grilled chicken with salsa.
