Grilled chicken salsa recipe

Ingredients (nutrition)

For Grilled Chicken

  • 4 skinless chicken breast fillets
  • pinch of celery salt
  • pinch of cayenne pepper
  • 2 1/2 tablespoons vegetable oil

For Salsa

  • 10 oz watermelon
  • 6 oz cantaloupe melon
  • 1 finely chopped red onion
  • 2 chopped green chilies
  • 2 1/2 tablespoons lime juice
  • 4 1/2 tablespoons chopped coriander leaves
  • pinch of salt

Preparation (instructions)

  1. Preheat grill to medium.
  2. Season chicken with celery salt and cayenne pepper.
  3. Brush with oil and grill for approximately 15 minutes.
  4. To make the salsa, remove rind and seeds from melons.
  5. Dice melons flesh finely and place into a mixing bowl.
  6. Add onion and chilies.
  7. Stir in lime juice, coriander and season well with salt.
  8. Serve grilled chicken with salsa.
