Ingredients (nutrition)
- 9 oz skinless chicken breast fillets, cut into bite size cubes
- 1/2 egg white
- 1 teaspoon cornflour mix with 3 drops of water
- 1/4 teaspoon salt
- 4 tablespoons vegetable oil
- 1 green pepper, cut into cubes
- 4 slices of root ginger
- 1 sliced spring onion
- 5 soaked and shredded dried red chilies
- 2 tablespoons yellow bean sauce
- 1 teaspoon rice wine
- 4 oz roasted cashew nuts
- 4 drops of sesame oil
Preparation (instructions)
- In a glass bowl, add chicken, egg white, cornflour mixture and salt.
- Mix well and set aside.
- Heat oil in a wok and add chicken, green pepper, ginger and spring onion.
- Stir fry under medium heat for 1 minute.
- Add chilies, yellow bean sauce and wine.
- Stir fry for another minute.
- Add roasted cashew nuts and sesame oil.
- Serve hot with aromatic rice or basmati rice.
