Kung po chicken recipe

Ingredients (nutrition)

  • 9 oz skinless chicken breast fillets, cut into bite size cubes
  • 1/2 egg white
  • 1 teaspoon cornflour mix with 3 drops of water
  • 1/4 teaspoon salt
  • 4 tablespoons vegetable oil
  • 1 green pepper, cut into cubes
  • 4 slices of root ginger
  • 1 sliced spring onion
  • 5 soaked and shredded dried red chilies
  • 2 tablespoons yellow bean sauce
  • 1 teaspoon rice wine
  • 4 oz roasted cashew nuts
  • 4 drops of sesame oil

Preparation (instructions)

  1. In a glass bowl, add chicken, egg white, cornflour mixture and salt.
  2. Mix well and set aside.
  3. Heat oil in a wok and add chicken, green pepper, ginger and spring onion.
  4. Stir fry under medium heat for 1 minute.
  5. Add chilies, yellow bean sauce and wine.
  6. Stir fry for another minute.
  7. Add roasted cashew nuts and sesame oil.
  8. Serve hot with aromatic rice or basmati rice.
