Mushroom & ginger duck recipe

Ingredients (nutrition)

  • 5 lb duck
  • 1 teaspoon granulated sugar
  • 2 crushed garlic cloves
  • 2 fl oz soy sauce
  • 10 soaked Chinese mushrooms (Shiitake mushrooms)
  • 1 1/2 tablespoons vegetable oil
  • 1 sliced onion
  • 1 root ginger, cut into sticks
  • 1 pt water
  • salt and ground black pepper to taste
  • 7 oz baby sweetcorn
  • 1/2 bunch sliced spring onions
  • 2 tablespoons cornflour mixed with 4 tablespoons water

Preparation (instructions)

  1. Cut duck along the breast, each leg and each breast into half.
  2. Place in a bowl, rub with sugar and garlic.
  3. Pour sot sauce over and set aside.
  4. Drain mushrooms, trim and discard stalks.
  5. Reserving soaking liquid.
  6. Heat up oil in a frying pan under medium heat.
  7. Sweat onion and ginger. Set aside.
  8. Stir fry duck until browned.
  9. Add mushroom, soaking liquid, water, salt and pepper.
  10. Cover and simmer under low heat for 1 1/4 hours.
  11. Add sweet corn, spring onion and cornflour mixture.
  12. Cook for 10 minutes.
  13. Serve hot with aromatic rice.
