Mustard chicken recipe

Ingredients (nutrition)

  • 2 oz butter
  • 1 finely chopped onion
  • 1 lb thinly sliced skinless chicken breast fillets
  • 1 tablespoon cornflour
  • 1 crushed garlic clove
  • 5 fl oz chicken stock
  • 1 tablespoon wholegrain mustard
  • 2 teaspoons ground coriander
  • 1 teaspoon chili paste
  • salt and ground black pepper to taste
  • 1 tablespoon sesame seeds

Preparation (instructions)

  1. Heat butter in a saucepan.
  2. Sweat onion until soft but not colored.
  3. In a glass bowl, mix chicken with cornflour.
  4. Add chicken mixture and garlic to the pan.
  5. Cook until chicken golden brown.
  6. Pour stock and stir in mustard, coriander and chili paste.
  7. Season well with salt and pepper.
  8. Bring to boil, reduce heat and simmer for 10 minutes.
  9. Garnish with sesame seeds.
  10. Serve hot with pasta.
