Ingredients (nutrition)
- 8 oz coarsely chopped roasted salted mixed nuts
- 5 chopped garlic cloves
- 1 lb butter
- 5 tablespoons chopped parsley
- 2 tablespoon lemon juice
- 8 oz puff pastry
- 1 lightly beaten egg
- 1 tablespoon poppy seeds
- 1 tablespoon caraway seeds
- 10 skinless chicken breast fillets
- 1 1/2 pt hot chicken stock
- ground black pepper to taste
Preparation (instructions)
- Mix nuts, garlic, butter, parsley, lemon juice and pepper in a glass bowl.
- Cover with cling film and refrigerate.
- Roll out puff pastry thinly and prick well.
- Leave to rest for 30 minutes.
- Preheat oven to 400 degree F.
- Brush pastry with beaten egg and cut out shapes using a cookie cutter.
- Sprinkle with poppy and caraway seeds.
- Bake in oven for 10 minutes.
- Arrange chicken breasts in a roasting tin and cover half with hot chicken stock.
- Cover with foil and cook for 30 minutes.
- Take out nut butter mixture from fridge and melt nut butter mixture.
- Drain cooked chicken breasts from the stock and place on a heated serving dish.
- Drizzle melted nut butter on chicken and garnish with pastry.
- Serve hot.
