Ingredients (nutrition)
- 3 coarsely chopped garlic cloves
- 1 sliced root ginger
- 4 tablespoons vegetable oil
- 2 finely chopped onions
- 12 curry leaves
- 1 sliced green chili
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1 lb 2oz skinless chicken breast fillets, cut into bite size cubes
- 8 fl oz water
- 1 teaspoon garam masala
- salt and ground black pepper to taste
Preparation (instructions)
- Pound garlic and ginger to a refine paste using mortar and pestle. Set aside.
- Heat oil in a frying pan under medium heat.
- Add onions, curry leaves and green chilli.
- Cook until onions are brown.
- Add garlic-ginger paste.
- Cook for a further 5 minutes with constant stirring.
- Add coriander, turmeric and salt.
- Cook for a further 5 minutes and mix well.
- Add chicken, water and garam masala.
- Mix well, cover and cook until chicken is cooked through.
- Stir ground pepper into the mixture.
- Serve hot.
