Ingredients (nutrition)
- 3 tablespoons vegetable oil
- 1 thinly shredded onion
- 3 slices thinly shredded root ginger
- 1 thinly shredded carrot
- 1 thinly shredded spring onion
- 6 oz cooked duck meat, cut into thin strips
- 5 oz pineapple cubes
- 2 1/2 tablespoons pineapple syrup
- 1/2 teaspoon salt
- 1 tablespoon red rice vinegar
- 1 teaspoon cornflour mixed with 1 1/2 teaspoons water
Preparation (instructions)
- Heat oil in a large frying pan.
- Sweat onions and stir fry ginger, carrot and spring onion for 1 1/2 minutes.
- Add duck, pineapple cubes, pineapple syrup, salt and vinegar.
- Stir well and add cornflour mixture.
- Cook for 1 minute until sauce thickens.
- Serve hot with basmati rice or aromatic rice.
