Pineapple duck recipe

Ingredients (nutrition)

  • 3 tablespoons vegetable oil
  • 1 thinly shredded onion
  • 3 slices thinly shredded root ginger
  • 1 thinly shredded carrot
  • 1 thinly shredded spring onion
  • 6 oz cooked duck meat, cut into thin strips
  • 5 oz pineapple cubes
  • 2 1/2 tablespoons pineapple syrup
  • 1/2 teaspoon salt
  • 1 tablespoon red rice vinegar
  • 1 teaspoon cornflour mixed with 1 1/2 teaspoons water

Preparation (instructions)

  1. Heat oil in a large frying pan.
  2. Sweat onions and stir fry ginger, carrot and spring onion for 1 1/2 minutes.
  3. Add duck, pineapple cubes, pineapple syrup, salt and vinegar.
  4. Stir well and add cornflour mixture.
  5. Cook for 1 minute until sauce thickens.
  6. Serve hot with basmati rice or aromatic rice.
