Ingredients (nutrition)
- 10 fl oz chicken stock
- 1 chopped onion
- 1 crushed garlic clove
- 3 sliced celery sticks
- 2 diced carrots
- 2 sprigs of fresh sage
- 12 oz skinless chicken breast fillets, cut into bite size cubes
- 8 oz wild rice
- 12 oz chopped plum tomatoes
- 1 dash Tabasco sauce
- salt and ground black pepper to taste
- 2 thinly sliced courgettes
- 3 oz diced ham
Preparation (instructions)
- In a saucepan, add stock, onion, garlic, celery, carrots and sage.
- Bring to boil, reduce heat, cover and simmer gently for 6 minutes.
- Add chicken, cover and cook for another 6 minutes.
- Add rice, tomatoes, Tabasco sauce, salt and pepper.
- Cover and simmer for 20-25 minutes.
- Stir in courgettes and ham.
- Cook for 8 minutes until rice is tender.
- Discard sage and serve immediately.
