Sage chicken & rice recipe

Ingredients (nutrition)

  • 10 fl oz chicken stock
  • 1 chopped onion
  • 1 crushed garlic clove
  • 3 sliced celery sticks
  • 2 diced carrots
  • 2 sprigs of fresh sage
  • 12 oz skinless chicken breast fillets, cut into bite size cubes
  • 8 oz wild rice
  • 12 oz chopped plum tomatoes
  • 1 dash Tabasco sauce
  • salt and ground black pepper to taste
  • 2 thinly sliced courgettes
  • 3 oz diced ham

Preparation (instructions)

  1. In a saucepan, add stock, onion, garlic, celery, carrots and sage.
  2. Bring to boil, reduce heat, cover and simmer gently for 6 minutes.
  3. Add chicken, cover and cook for another 6 minutes.
  4. Add rice, tomatoes, Tabasco sauce, salt and pepper.
  5. Cover and simmer for 20-25 minutes.
  6. Stir in courgettes and ham.
  7. Cook for 8 minutes until rice is tender.
  8. Discard sage and serve immediately.
