Spicy chicken recipe

Ingredients (nutrition)

  • 3 fl oz lemon juice
  • 1 crushed garlic clove
  • 1 teaspoon grated root ginger
  • 1 teaspoon crushed dried red chilies
  • 1 teaspoon salt
  • 1 teaspoon Demerara sugar
  • 2 1/4 tablespoons honey
  • 12 skinless chicken thighs, prick with forks
  • 2 1/2 tablespoons chopped coriander leaves
  • 1 finely chopped fresh green chili
  • 2 1/2 tablespoons vegetable oil

Preparation (instructions)

  1. In a glass mixing bowl, combine well lemon juice, garlic, ginger, red chilies, salt, sugar and honey.
  2. Coat chicken in the mixture and allow to marinate for 1 hour in a refrigerator.
  3. Preheat grill to medium.
  4. Take out chicken from the refrigerator and combine coriander and green chili.
  5. Transfer chicken in a flameproof dish together with the marinade.
  6. Baste chicken with oil.
  7. Grill chicken for 20 minutes.
  8. Serve hot.
