Ingredients (nutrition)
- 4 fl oz strong black tea
- 4 fl oz dry sherry
- 4 fl oz light soy sauce
- 2 1/2 tablespoons honey
- 1 crushed garlic clove
- 1 teaspoon ground cloves
- salt and ground black pepper to taste
- 4 small duck breasts
- 1/2 oz low fat spread
Preparation (instructions)
- In a glass bowl, combine well black tea, sherry, soy sauce, honey, garlic, clove, salt and pepper.
- Marinate duck in the mixture for at 1 1/2 hour.
- Transfer duck to a grill rack. Preheat grill to medium-high.
- Pour marinade into a saucepan and heat until sauce reduces to 1/2.
- Stir in low fat spread.
- Brush the sauce over the duck and grill for 10 minutes on each side.
- Brush regularly until duck is cooked and golden brown.
- Serve hot with roasted vegetables.
