Sweet & spicy duck recipe

Ingredients (nutrition)

  • 4 fl oz strong black tea
  • 4 fl oz dry sherry
  • 4 fl oz light soy sauce
  • 2 1/2 tablespoons honey
  • 1 crushed garlic clove
  • 1 teaspoon ground cloves
  • salt and ground black pepper to taste
  • 4 small duck breasts
  • 1/2 oz low fat spread

Preparation (instructions)

  1. In a glass bowl, combine well black tea, sherry, soy sauce, honey, garlic, clove, salt and pepper.
  2. Marinate duck in the mixture for at 1 1/2 hour.
  3. Transfer duck to a grill rack. Preheat grill to medium-high.
  4. Pour marinade into a saucepan and heat until sauce reduces to 1/2.
  5. Stir in low fat spread.
  6. Brush the sauce over the duck and grill for 10 minutes on each side.
  7. Brush regularly until duck is cooked and golden brown.
  8. Serve hot with roasted vegetables.
