Ingredients (nutrition)
- 4 duck breasts
- salt and ground black pepper to taste
- 1 tablespoon canola oil
- 2 oranges, cut into segments
- 5 fl oz squeezed orange juice
- 1 tablespoon port
- 2 tablespoons orange marmalade
- 1/2 oz butter
- 1 teaspoon cornflour
Preparation (instructions)
- Season duck with salt and pepper. Set aside.
- Heat oil in a frying pan under medium heat.
- Add the duck, cover and cook for 3 minutes.
- Uncover, turn over the duck and cook for another 6 minutes.
- Remove duck and drain on kitchen paper towel.
- Set aside and keep warm.
- To make the sauce, add orange segments, orange juice, port and orange marmalade into a saucepan.
- Bring to boil, reduce heat, add butter and cornflour.
- Stir well until corn flour dissolves.
- Add reserved duck and cook for 3 1/2 minutes.
- Serve hot.
