Tangy duck recipe

Ingredients (nutrition)

  • 4 duck breasts
  • salt and ground black pepper to taste
  • 1 tablespoon canola oil
  • 2 oranges, cut into segments
  • 5 fl oz squeezed orange juice
  • 1 tablespoon port
  • 2 tablespoons orange marmalade
  • 1/2 oz butter
  • 1 teaspoon cornflour

Preparation (instructions)

  1. Season duck with salt and pepper. Set aside.
  2. Heat oil in a frying pan under medium heat.
  3. Add the duck, cover and cook for 3 minutes.
  4. Uncover, turn over the duck and cook for another 6 minutes.
  5. Remove duck and drain on kitchen paper towel.
  6. Set aside and keep warm.
  7. To make the sauce, add orange segments, orange juice, port and orange marmalade into a saucepan.
  8. Bring to boil, reduce heat, add butter and cornflour.
  9. Stir well until corn flour dissolves.
  10. Add reserved duck and cook for 3 1/2 minutes.
  11. Serve hot.
