Turkey gumbo recipe

Ingredients (nutrition)

  • 1 oz butter
  • 9 oz chopped okra
  • 5 oz chopped celery
  • 1 chopped onion
  • 1 chopped green pepper
  • 2 minced garlic cloves
  • 8 oz tomato puree
  • 12 oz chopped plum tomatoes
  • 3/4 pt water
  • 6 1/2 oz chopped cooked turkey

Preparation (instructions)

  1. Melt butter in a frying pan.
  2. Add okra and saute for 5 minutes. Set aside in a bowl.
  3. Add celery, onion, green pepper and garlic to the pan.
  4. Sweat under medium heat until onion softens.
  5. Add tomato puree, tomatoes, water, okra and turkey.
  6. Reduce heat to low and cook for 10 minutes.
  7. Serve hot with rice.
