Ingredients (nutrition)
- 1 oz butter
- 9 oz chopped okra
- 5 oz chopped celery
- 1 chopped onion
- 1 chopped green pepper
- 2 minced garlic cloves
- 8 oz tomato puree
- 12 oz chopped plum tomatoes
- 3/4 pt water
- 6 1/2 oz chopped cooked turkey
Preparation (instructions)
- Melt butter in a frying pan.
- Add okra and saute for 5 minutes. Set aside in a bowl.
- Add celery, onion, green pepper and garlic to the pan.
- Sweat under medium heat until onion softens.
- Add tomato puree, tomatoes, water, okra and turkey.
- Reduce heat to low and cook for 10 minutes.
- Serve hot with rice.
