Ingredients (nutrition)
- 5 fl oz vegetable stock
- 1 chopped onion
- 1 oz low fat spread
- 1 oz flour
- 10 fl oz skimmed milk
- salt and ground black pepper to taste
- 2 oz grated Cheddar cheese
- 1 teaspoon mustard powder
- 8 oz macaroni
- 4 rashers smoked turkey, cut into halves
- 3 sliced tomatoes
- 3 fresh basil leaves
- 1 1/2 tablespoons grated Parmesan cheese
Preparation (instructions)
- In a large saucepan, add stock and onion.
- Bring to boil and cook until stock is almost reduced entirely. Set aside.
- Add lowfat spread, flour, milk, salt and pepper in a separate saucepan.
- Whisk under medium heat until thickens.
- Remove from heat and add reserved onion, Cheddar cheese and mustard powder.
- Preheat grill.
- Cook macaroni as per package instruction.
- Mix in prepared sauce and transfer to ovenproof dish.
- Top with turkey and tomatoes.
- Place basil leaves underneath the macaroni cheese.
- Sprinkle Parmesan cheese on top.
- Grill until lightly brown and serve immediately.
