Turkey & macaroni cheese recipe

Ingredients (nutrition)

  • 5 fl oz vegetable stock
  • 1 chopped onion
  • 1 oz low fat spread
  • 1 oz flour
  • 10 fl oz skimmed milk
  • salt and ground black pepper to taste
  • 2 oz grated Cheddar cheese
  • 1 teaspoon mustard powder
  • 8 oz macaroni
  • 4 rashers smoked turkey, cut into halves
  • 3 sliced tomatoes
  • 3 fresh basil leaves
  • 1 1/2 tablespoons grated Parmesan cheese

Preparation (instructions)

  1. In a large saucepan, add stock and onion.
  2. Bring to boil and cook until stock is almost reduced entirely. Set aside.
  3. Add lowfat spread, flour, milk, salt and pepper in a separate saucepan.
  4. Whisk under medium heat until thickens.
  5. Remove from heat and add reserved onion, Cheddar cheese and mustard powder.
  6. Preheat grill.
  7. Cook macaroni as per package instruction.
  8. Mix in prepared sauce and transfer to ovenproof dish.
  9. Top with turkey and tomatoes.
  10. Place basil leaves underneath the macaroni cheese.
  11. Sprinkle Parmesan cheese on top.
  12. Grill until lightly brown and serve immediately.
