Tuscan chicken recipe

Ingredients (nutrition)

  • 1 1/2 teaspoons olive oil
  • 8 skinned chicken thighs
  • 2 sliced red peppers
  • 1 thinly sliced onion
  • 1 crushed garlic clove
  • 10 fl oz tomato puree
  • 5 fl oz dry white wine
  • 1 teaspoon dried oregano
  • salt and ground black pepper to taste
  • 12 oz canned cooked cannellini beans
  • 3 tablespoons breadcrumbs

Preparation (instructions)

  1. Heat oil in a pan until smoking hot.
  2. Brown chicken, remove and set aside in a warm place.
  3. Add red peppers and onion in the pan.
  4. Saute until softened.
  5. Add garlic and saute for 1 minute.
  6. Return chicken, stir in tomato puree, wine, oregano, salt and pepper.
  7. Bring to boil, cover, reduce heat and simmer for 40 minutes.
  8. Preheat grill.
  9. Add beans in chicken mixture and simmer for another 5 minutes.
  10. Top with breadcrumbs and bring to grill until golden brown.
  11. Serve hot.
