Ingredients (nutrition)
- 1 1/2 teaspoons olive oil
- 8 skinned chicken thighs
- 2 sliced red peppers
- 1 thinly sliced onion
- 1 crushed garlic clove
- 10 fl oz tomato puree
- 5 fl oz dry white wine
- 1 teaspoon dried oregano
- salt and ground black pepper to taste
- 12 oz canned cooked cannellini beans
- 3 tablespoons breadcrumbs
Preparation (instructions)
- Heat oil in a pan until smoking hot.
- Brown chicken, remove and set aside in a warm place.
- Add red peppers and onion in the pan.
- Saute until softened.
- Add garlic and saute for 1 minute.
- Return chicken, stir in tomato puree, wine, oregano, salt and pepper.
- Bring to boil, cover, reduce heat and simmer for 40 minutes.
- Preheat grill.
- Add beans in chicken mixture and simmer for another 5 minutes.
- Top with breadcrumbs and bring to grill until golden brown.
- Serve hot.
