Ingredients (nutrition)
- 8 oz dried apricots
- 10 fl oz unsweetened orange juice
- 2 1/2 teaspoons honey
- 2 1/2 tablespoons lemon juice
- 1 tablespoon powdered gelatin
- 4 tablespoons boiling water
Preparation (instructions)
- In a saucepan, add apricots and orange juice.
- Bring to boil, reduce heat, cover and simmer for 18 minutes.
- Transfer mixture and puree until smooth and creamy in a food processor or blender.
- Add honey and lemon juice. Mix well.
- Measure mixture with a measuring cup and make up to 1 pt with water.
- Meanwhile, dissolve gelatin with boiling water.
- Stir in apricot mixture and mix well.
- Pour mixture into 4 ramekins or jelly moulds.
- Refrigerate for at least 6 hours prior serving.
