Apricot & orange jellies recipe

Ingredients (nutrition)

  • 8 oz dried apricots
  • 10 fl oz unsweetened orange juice
  • 2 1/2 teaspoons honey
  • 2 1/2 tablespoons lemon juice
  • 1 tablespoon powdered gelatin
  • 4 tablespoons boiling water

Preparation (instructions)

  1. In a saucepan, add apricots and orange juice.
  2. Bring to boil, reduce heat, cover and simmer for 18 minutes.
  3. Transfer mixture and puree until smooth and creamy in a food processor or blender.
  4. Add honey and lemon juice. Mix well.
  5. Measure mixture with a measuring cup and make up to 1 pt with water.
  6. Meanwhile, dissolve gelatin with boiling water.
  7. Stir in apricot mixture and mix well.
  8. Pour mixture into 4 ramekins or jelly moulds.
  9. Refrigerate for at least 6 hours prior serving.
