Ingredients (nutrition)
- 2 sliced avocados
- 4 cups whipping cream
- 3 tablespoons light rum
- 4 egg yolks
- 2 tablespoons all purpose flour
- 1/4 cup sugar
- pinch of salt
- 2 teaspoons vanilla
Preparation (instructions)
- In a blender or food processor, add avocados, 1 cup cream and rum.
- Puree until smooth and chill for 2 1/2 hours.
- Meanwhile, beat egg yolks and 1 cup cream until thick. Set aside.
- Whisk flour, sugar and salt in a saucepan.
- Stir in remaining cream and cook under medium heat until mixture thickens.
- Stir in egg mixture and cook for a 50 seconds.
- Remove heat and add in vanilla.
- Chill in refrigerator for 1 3/4 hours.
- Mix well with avocado mixture in an ice cream machine or ice cream maker and process according to manufacturer's direction.
