Avocado ice cream recipe

Ingredients (nutrition)

  • 2 sliced avocados
  • 4 cups whipping cream
  • 3 tablespoons light rum
  • 4 egg yolks
  • 2 tablespoons all purpose flour
  • 1/4 cup sugar
  • pinch of salt
  • 2 teaspoons vanilla

Preparation (instructions)

  1. In a blender or food processor, add avocados, 1 cup cream and rum.
  2. Puree until smooth and chill for 2 1/2 hours.
  3. Meanwhile, beat egg yolks and 1 cup cream until thick. Set aside.
  4. Whisk flour, sugar and salt in a saucepan.
  5. Stir in remaining cream and cook under medium heat until mixture thickens.
  6. Stir in egg mixture and cook for a 50 seconds.
  7. Remove heat and add in vanilla.
  8. Chill in refrigerator for 1 3/4 hours.
  9. Mix well with avocado mixture in an ice cream machine or ice cream maker and process according to manufacturer's direction.
