Blueberry sundae recipe

Ingredients (nutrition)

  • 1 3/4 lb fresh blueberries
  • 2 1/2 tablespoons lemon juice
  • 1 1/2 teaspoons vanilla essence
  • 2 teaspoons cornflour with 2 tablespoons water
  • 12 oz sugar
  • 1 pt vanilla yogurt

Preparation (instructions)

  1. Add blueberries in a food processor or electronic blender and puree until smooth.
  2. Transfer blueberry puree in a saucepan and stir in lemon juice and vanilla essence.
  3. Cook under medium heat for 6 minutes.
  4. Add cornflour mixture into the saucepan and cook until sauce thickens.
  5. Remove from heat and stir in sugar.
  6. Strain mixture into a jug.
  7. Layer berry mixture alternately with yogurt in serving glasses until complete.
  8. Chill for 2 hours prior serving.
