Ingredients (nutrition)
- 1 3/4 lb fresh blueberries
- 2 1/2 tablespoons lemon juice
- 1 1/2 teaspoons vanilla essence
- 2 teaspoons cornflour with 2 tablespoons water
- 12 oz sugar
- 1 pt vanilla yogurt
Preparation (instructions)
- Add blueberries in a food processor or electronic blender and puree until smooth.
- Transfer blueberry puree in a saucepan and stir in lemon juice and vanilla essence.
- Cook under medium heat for 6 minutes.
- Add cornflour mixture into the saucepan and cook until sauce thickens.
- Remove from heat and stir in sugar.
- Strain mixture into a jug.
- Layer berry mixture alternately with yogurt in serving glasses until complete.
- Chill for 2 hours prior serving.
