Cherry mousse recipe

Ingredients (nutrition)

  • 1 egg
  • 2 tablespoons powdered gelatin
  • 1 tablespoon cold water
  • 1 tablespoon cornflour
  • 5 fl oz cranberry juice
  • 8 fl oz boiling water
  • 1 lb pitted cherries
  • 8 fl oz low fat Greek style yogurt
  • 4 1/2 oz sugar

Preparation (instructions)

  1. In a bowl, mix egg, gelatin, cold water, cornflour, cranberry juice and boiling water. Set aside.
  2. Add cherries in a food processor or blender and puree until smooth.
  3. Add cherry puree, yogurt and sugar in gelatin mixture and blend until smooth.
  4. Refrigerate for 5 hours and blend another time prior serving.
