Chocolate brandy cream recipe

Ingredients (nutrition)

  • 6 oz dark chocolate, broken into pieces
  • 2 tablespoons brandy
  • 3/4 teaspoon coffee essence
  • 10 fl oz whipping cream
  • 1 egg white

Preparation (instructions)

  1. Melt dark chocolate in a heatproof glass bowl over a pan of simmering water.
  2. Allow to cool and stir in brandy and coffee essence. Mix well.
  3. In a separate bowl, whip cream until form soft peaks.
  4. Fold whipped cream into chocolate mixture.
  5. In another bowl, whisk egg white until stiff and fold in chocolate mixture.
  6. Transfer mixture in tall serving glasses and chill in refrigerator for 3 hours prior serving.
