Chocolate rum pots recipe

Ingredients (nutrition)

  • 8 oz dark chocolate
  • 4 eggs
  • 3 oz caster sugar
  • 2 fl oz dark rum
  • 3 fl oz double cream

Preparation (instructions)

  1. Melt dark chocolate in a heatproof bowl over a pan of boiling water. Set aside to cool.
  2. In a bowl, whisk egg yolks and sugar until light and fluffy using an electric hand held whisk or mixer.
  3. Add chocolate, rum and double cream in the egg yolk mixture.
  4. In a separate bowl, whisk egg whites until form soft peaks.
  5. Fold in egg whites in chocolate mixture.
  6. Pour mixture in 6 ramekins or moulds.
  7. Chill in refrigerator for 3 hours prior serving.
