Ingredients (nutrition)
- 8 oz dark chocolate
- 4 eggs
- 3 oz caster sugar
- 2 fl oz dark rum
- 3 fl oz double cream
Preparation (instructions)
- Melt dark chocolate in a heatproof bowl over a pan of boiling water. Set aside to cool.
- In a bowl, whisk egg yolks and sugar until light and fluffy using an electric hand held whisk or mixer.
- Add chocolate, rum and double cream in the egg yolk mixture.
- In a separate bowl, whisk egg whites until form soft peaks.
- Fold in egg whites in chocolate mixture.
- Pour mixture in 6 ramekins or moulds.
- Chill in refrigerator for 3 hours prior serving.
