Ingredients (nutrition)
- 1 tablespoon powdered gelatin
- 3 1/2 fl oz hot water
- 3 eggs
- 4 oz caster sugar
- grated zest and juice of 1 lemon
- grated zest and juice of 1 lime
- grated zest and juice of 1/2 orange
- 5 fl oz double cream
- 4 oz fromage frais
Preparation (instructions)
- Place and tie greaseproof paper callar around a souffle dish. Set aside.
- In a bowl, combine gelatin and hot water. Allow to set for 4 minutes and a further 12 minutes to cool. Set aside.
- Separate eggs and whisk egg yolks and sugar in a bowl until light and fluffy.
- Stir whisked egg yolks in lemon zest, lime zest, orange zest and gelatin liquid.
- Place cream in a chilled bowl and whip until it is able to hold its shape.
- Fold in cream into citrus-gelatin mixture. Set aside.
- In a separate bowl, whisk egg whites until stiff.
- Fold whisked egg whites in cream mixture.
- Chill in freezer for 3 hours, allow to rest for 8-10 minutes prior serving.
