Citrus souffle recipe

Ingredients (nutrition)

  • 1 tablespoon powdered gelatin
  • 3 1/2 fl oz hot water
  • 3 eggs
  • 4 oz caster sugar
  • grated zest and juice of 1 lemon
  • grated zest and juice of 1 lime
  • grated zest and juice of 1/2 orange
  • 5 fl oz double cream
  • 4 oz fromage frais

Preparation (instructions)

  1. Place and tie greaseproof paper callar around a souffle dish. Set aside.
  2. In a bowl, combine gelatin and hot water. Allow to set for 4 minutes and a further 12 minutes to cool. Set aside.
  3. Separate eggs and whisk egg yolks and sugar in a bowl until light and fluffy.
  4. Stir whisked egg yolks in lemon zest, lime zest, orange zest and gelatin liquid.
  5. Place cream in a chilled bowl and whip until it is able to hold its shape.
  6. Fold in cream into citrus-gelatin mixture. Set aside.
  7. In a separate bowl, whisk egg whites until stiff.
  8. Fold whisked egg whites in cream mixture.
  9. Chill in freezer for 3 hours, allow to rest for 8-10 minutes prior serving.
