Ingredients (nutrition)
- melted butter for brushing
- 6 oz sugar
- 2 fl oz water
- 1 1/4 pt milk
- 3 oz caster sugar
- 1 teaspoon vanilla essence
- 4 eggs
Preparation (instructions)
- Preheat oven to 325 degree F.
- Grease 8 ramekins or moulds with some melted butter. Set aside.
- Dissolve sugar in water in a saucepan.
- Bring to boil, reduce heat and simmer until sugar caramelizes.
- Remove from heat and pour caramel at the bottom of the ramekins or moulds.
- To make the custard, heat milk in a saucepan under low heat.
- Remove milk from heat.
- In a separate bowl, whisk in caster sugar, vanilla essence and eggs.
- Stir into milk and strain into the ramekins or moulds.
- Place ramekins or moulds in a baking dish filled with boiling water halfway of the ramekins.
- Bake in preheated oven for 25-35 minutes.
- Chill in refrigerator for 3 hours prior serving.
