Creme caramel recipe

Ingredients (nutrition)

  • melted butter for brushing
  • 6 oz sugar
  • 2 fl oz water
  • 1 1/4 pt milk
  • 3 oz caster sugar
  • 1 teaspoon vanilla essence
  • 4 eggs

Preparation (instructions)

  1. Preheat oven to 325 degree F.
  2. Grease 8 ramekins or moulds with some melted butter. Set aside.
  3. Dissolve sugar in water in a saucepan.
  4. Bring to boil, reduce heat and simmer until sugar caramelizes.
  5. Remove from heat and pour caramel at the bottom of the ramekins or moulds.
  6. To make the custard, heat milk in a saucepan under low heat.
  7. Remove milk from heat.
  8. In a separate bowl, whisk in caster sugar, vanilla essence and eggs.
  9. Stir into milk and strain into the ramekins or moulds.
  10. Place ramekins or moulds in a baking dish filled with boiling water halfway of the ramekins.
  11. Bake in preheated oven for 25-35 minutes.
  12. Chill in refrigerator for 3 hours prior serving.
