Dried fruit fool recipe

Ingredients (nutrition)

  • 11 oz dried apricots or peaches
  • 10 fl oz orange juice
  • 9 fl oz low fat fromage frais
  • 2 egg whites

Preparation (instructions)

  1. Add dried apricots or peaches in a saucepan with orange juice.
  2. Bring to boil, reduce heat, cover and simmer for 3 1/4 minutes.
  3. Puree in an electronic food processor or blender until smooth and creamy.
  4. Fold in fromage frais and set aside.
  5. In a bowl, whisk egg whites until form soft peaks.
  6. Stir egg whites in fruit mixture.
  7. Transfer into serving glasses and chill in a refrigerator for 1 hour before serving.
