Ingredients (nutrition)
- 2 egg yolks
- 2 tablespoons dark rum
- 1 tablespoon brandy
- 2 1/2 tablespoons caster sugar
- 10 fl oz double cream
Preparation (instructions)
- Mix egg yolks, rum and brandy in a bowl over a pan of simmering water.
- Whisk until egg mixture thickens, remove from heat and continue to whisk.
- Allow to cool slightly and transfer into a freezer container.
- Meanwhile, in a bowl, whip cream until form soft peaks and fold into egg mixture.
- Freeze for 5 hours prior serving.
