Frozen lemon loaf recipe

Ingredients (nutrition)

  • vanilla wafers for lining pan
  • 1 tablespoon lemon zest
  • 3/4 cup lemon juice
  • 14 oz sweetened condensed milk
  • 12 oz non dairy whipped topping
  • 3/4 cup toasted sweetened coconut

Preparation (instructions)

  1. Line loaf pan with foil and place wafers at the bottom and sides. Set aside.
  2. In a bowl, mix well lemon zest, lemon juice and condense milk until mixture thickens.
  3. Fold in whipped topping and mix gently.
  4. Transfer mixture into loaf pan and garnish with toasted coconut.
  5. Freeze for 4 hours and cut into slices.
  6. Serve immediately.
