Ingredients (nutrition)
- vanilla wafers for lining pan
- 1 tablespoon lemon zest
- 3/4 cup lemon juice
- 14 oz sweetened condensed milk
- 12 oz non dairy whipped topping
- 3/4 cup toasted sweetened coconut
Preparation (instructions)
- Line loaf pan with foil and place wafers at the bottom and sides. Set aside.
- In a bowl, mix well lemon zest, lemon juice and condense milk until mixture thickens.
- Fold in whipped topping and mix gently.
- Transfer mixture into loaf pan and garnish with toasted coconut.
- Freeze for 4 hours and cut into slices.
- Serve immediately.
