Ingredients (nutrition)
- 3 oz short grain rice
- 1 1/2 pt milk
- 1 cinnamon stick
- 7 oz mixed dried fruit
- 6 fl oz orange juice
- 2 oz caster sugar
- grated zest of 1 orange
Preparation (instructions)
- Add rice, milk and cinnamon in a heavy saucepan.
- Bring to boil, reduce heat, cover and simmer for 1 1/2 hours.
- At the same time, add dried fruit and orange juice in another saucepan.
- Bring to boil, cover and simmer for 50 minutes. Set aside.
- Discard cinnamon and stir in sugar and orange zest in the rice.
- In a lightly greased ring mould, place fruits at the bottom and press firmly rice on top of it.
- Refrigerate for 1 1/2 hours before serving.
