Fruit rice ring recipe

Ingredients (nutrition)

  • 3 oz short grain rice
  • 1 1/2 pt milk
  • 1 cinnamon stick
  • 7 oz mixed dried fruit
  • 6 fl oz orange juice
  • 2 oz caster sugar
  • grated zest of 1 orange

Preparation (instructions)

  1. Add rice, milk and cinnamon in a heavy saucepan.
  2. Bring to boil, reduce heat, cover and simmer for 1 1/2 hours.
  3. At the same time, add dried fruit and orange juice in another saucepan.
  4. Bring to boil, cover and simmer for 50 minutes. Set aside.
  5. Discard cinnamon and stir in sugar and orange zest in the rice.
  6. In a lightly greased ring mould, place fruits at the bottom and press firmly rice on top of it.
  7. Refrigerate for 1 1/2 hours before serving.
