Ingredients (nutrition)
- 1 cup water
- 1/2 cup sugar
- 1/2 cup light corn syrup
- 4 kiwifruits, cut into quarters
- 1/2 cup lime juice
- 1/2 teaspoon grated lime zest
Preparation (instructions)
- In a saucepan under medium heat, add water, sugar and corn syrup.
- Cook until sugar dissolves.
- Remove from heat and set aside.
- Puree kiwifruits and lime juice in a blender or food processor.
- Add kiwi puree into sugar mixture and stir in lime zest.
- Transfer mixture into a freezer container and freeze for 1 1/2 hours.
- Beat with an electric hand held mixer or rotary whisk until light and fluffy.
- Return to freezer for 1 3/4 hours.
- Spoon into individual dessert glasses and serve.
