Lemon curd ice cream recipe

Ingredients (nutrition)

  • 6 eggs
  • 4 oz caster sugar
  • 4 oz butter
  • grated zest and juice of 4 lemons
  • 1 1/4 pt Greek-style yogurt

Preparation (instructions)

  1. In a saucepan, add eggs, sugar, butter, lemon zest and lemon juice.
  2. Cook under low heat with regular stirring until sugar caramelized.
  3. Remove from heat, allow to cool and stir in yogurt.
  4. Transfer mixture into freezer container and freeze until set.
  5. Take out and transfer to refrigerator 15 minutes prior serving.
