Ingredients (nutrition)
- 1/3 oz powdered gelatin
- grated zest and juice of 2 limes
- 5 egg yolks
- 3 egg whites
- 2 oz caster sugar
- 10 fl oz mango puree
- 4 fl oz whipped double cream
Preparation (instructions)
- In a heatproof bowl, soak gelatin in lime juice for 12 minutes. Set aside.
- Meanwhile, in another bowl, whisk egg yolks, egg whites and sugar until thick.
- Add mango puree, cream and lime zest in the egg mixture. Mix well.
- Place heatproof bowl gelatin mixture over a pan of simmering water to dissolve the mixture.
- Add in gelatin mixture in egg mixture. Mix well.
- Transfer into serving glasses, freeze for 18 minutes and chill in refrigerator for 1 1/2 hours prior serving.
