Mango & lime mousse recipe

Ingredients (nutrition)

  • 1/3 oz powdered gelatin
  • grated zest and juice of 2 limes
  • 5 egg yolks
  • 3 egg whites
  • 2 oz caster sugar
  • 10 fl oz mango puree
  • 4 fl oz whipped double cream

Preparation (instructions)

  1. In a heatproof bowl, soak gelatin in lime juice for 12 minutes. Set aside.
  2. Meanwhile, in another bowl, whisk egg yolks, egg whites and sugar until thick.
  3. Add mango puree, cream and lime zest in the egg mixture. Mix well.
  4. Place heatproof bowl gelatin mixture over a pan of simmering water to dissolve the mixture.
  5. Add in gelatin mixture in egg mixture. Mix well.
  6. Transfer into serving glasses, freeze for 18 minutes and chill in refrigerator for 1 1/2 hours prior serving.
