Ingredients (nutrition)
- 1 pt water
- 6 oz sugar
- 3 green cardamom pods
- 2 mangoes
- 3 egg whites
Preparation (instructions)
- In a saucepan, add water, sugar and cardamom pods and cook under low heat until sugar dissolves.
- Increase heat, bring to boil for 6 minutes.
- Remove from heat and set aside to cool.
- Scrap mango flesh from the 2 mangoes and blend in a food processor or blender.
- Transfer mango puree in a shallow dish and strain in cooled syrup.
- Freeze for 2 1/2 hours and transfer into another bowl.
- Meanwhile, whisk egg whites until form stiff peaks.
- Fold egg whites into mango mixture and mix well.
- Chill mixture in a freezer for 15 hours.
- Prior serving, allow to soften for 15 minutes.
- Garnish with mango slices if desired.
