Mango sorbet recipe

Ingredients (nutrition)

  • 1 pt water
  • 6 oz sugar
  • 3 green cardamom pods
  • 2 mangoes
  • 3 egg whites

Preparation (instructions)

  1. In a saucepan, add water, sugar and cardamom pods and cook under low heat until sugar dissolves.
  2. Increase heat, bring to boil for 6 minutes.
  3. Remove from heat and set aside to cool.
  4. Scrap mango flesh from the 2 mangoes and blend in a food processor or blender.
  5. Transfer mango puree in a shallow dish and strain in cooled syrup.
  6. Freeze for 2 1/2 hours and transfer into another bowl.
  7. Meanwhile, whisk egg whites until form stiff peaks.
  8. Fold egg whites into mango mixture and mix well.
  9. Chill mixture in a freezer for 15 hours.
  10. Prior serving, allow to soften for 15 minutes.
  11. Garnish with mango slices if desired.
