- 7 1/2 oz strawberries
- 8 1/2 oz redcurrants
- 2 tablespoons cold water
- 4 oz caster sugar
- 5 fl oz water
- 5 fl oz sparkling white wine
- 2 egg whites
Preparation (instructions)
- In a saucepan, add strawberries, red currants and cold water. Cook for 12 minutes and press all the berries through a sieve to form a smooth puree. Set aside.
- Dissolve sugar with water in a saucepan under low heat.
- Bring to boil for 12 minutes and set aside to cool for 45 minutes.
- Add wine, berry puree into cooled syrup. Mix well.
- Transfer into a freezer container and freeze for 2 1/2 hours.
- Whisk egg whites until form stiff peaks using an electronic hand held whisk or mixer.
- Fold in egg whites into mixture and continue to freeze for another 2 1/2 hours.
- Allow to soften prior serving.
