Mixed berry sorbet recipe

Ingredients (nutrition)

  • 7 1/2 oz strawberries
  • 8 1/2 oz redcurrants
  • 2 tablespoons cold water
  • 4 oz caster sugar
  • 5 fl oz water
  • 5 fl oz sparkling white wine
  • 2 egg whites

Preparation (instructions)

  1. In a saucepan, add strawberries, red currants and cold water. Cook for 12 minutes and press all the berries through a sieve to form a smooth puree. Set aside.
  2. Dissolve sugar with water in a saucepan under low heat.
  3. Bring to boil for 12 minutes and set aside to cool for 45 minutes.
  4. Add wine, berry puree into cooled syrup. Mix well.
  5. Transfer into a freezer container and freeze for 2 1/2 hours.
  6. Whisk egg whites until form stiff peaks using an electronic hand held whisk or mixer.
  7. Fold in egg whites into mixture and continue to freeze for another 2 1/2 hours.
  8. Allow to soften prior serving.
