Passion fruit and apple foam recipe

Ingredients (nutrition)

  • 1 lb chopped apples
  • 4 fl oz unsweetened apple juice
  • 3 passion fruit
  • 3 egg whites

Preparation (instructions)

  1. Cook apple chunks and apple juice gently in a saucepan until apple chunks are soften.
  2. Transfer apple mixture to a bowl and whisk until form a smooth and creamy puree.
  3. Cut passion fruit into half, remove seeds and pulp into apple puree. Mix well.
  4. In a separate bowl, whisk egg whites until form soft peaks.
  5. Stir egg whites into apple mixture.
  6. Transfer into serving bowls and chill in a refrigerator for 1 hour before serving.
