Pineapple sorbet recipe

Ingredients (nutrition)

  • 11 oz sugar
  • 1 pt 7 fl oz unsweetened pineapple juice
  • 3 1/2 tablespoons lemon juice
  • 1 lightly beaten egg white

Preparation (instructions)

  1. In a heavy saucepan, dissolve sugar with pineapple juice under medium heat.
  2. Bring to boil until sugar caramelized.
  3. Pour in lemon juice and mix well.
  4. Transfer mixture into a tray and cover with greaseproof paper.
  5. Freeze for 3 hours and transfer mixture into food processor or electronic blender.
  6. Puree and return back to tray and into freezer.
  7. Repeat blending and freezing two more times and add in egg white.
  8. Puree until smooth, return to tray and into freezer until set.
  9. Serve in dessert glasses.
