Ingredients (nutrition)
- 11 oz sugar
- 1 pt 7 fl oz unsweetened pineapple juice
- 3 1/2 tablespoons lemon juice
- 1 lightly beaten egg white
Preparation (instructions)
- In a heavy saucepan, dissolve sugar with pineapple juice under medium heat.
- Bring to boil until sugar caramelized.
- Pour in lemon juice and mix well.
- Transfer mixture into a tray and cover with greaseproof paper.
- Freeze for 3 hours and transfer mixture into food processor or electronic blender.
- Puree and return back to tray and into freezer.
- Repeat blending and freezing two more times and add in egg white.
- Puree until smooth, return to tray and into freezer until set.
- Serve in dessert glasses.
