Pumpkin squares recipe

Ingredients (nutrition)

  • 16 oz pumpkin
  • 1 1/2 cups sugar
  • 1 cup chopped pecans
  • 1 teaspoon ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 cup vanilla ice cream
  • 1 box ginger snaps

Preparation (instructions)

  1. In a large mixing glass bowl, mix well pumpkin, sugar, pecans, ginger, cinnamon, nutmeg and salt.
  2. Fold in ice cream.
  3. Meanwhile, line ginger snaps on a rectangular pan and spread 1/2 pumpkin mixture.
  4. Top with remaining ginger snaps and spread remaining pumpkin mixture.
  5. Freeze for 6-8 hours and cut into squares.
  6. Serve immediately.
