Ingredients (nutrition)
- 16 oz pumpkin
- 1 1/2 cups sugar
- 1 cup chopped pecans
- 1 teaspoon ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon salt
- 1/2 cup vanilla ice cream
- 1 box ginger snaps
Preparation (instructions)
- In a large mixing glass bowl, mix well pumpkin, sugar, pecans, ginger, cinnamon, nutmeg and salt.
- Fold in ice cream.
- Meanwhile, line ginger snaps on a rectangular pan and spread 1/2 pumpkin mixture.
- Top with remaining ginger snaps and spread remaining pumpkin mixture.
- Freeze for 6-8 hours and cut into squares.
- Serve immediately.
