Ingredients (nutrition)
- 3 sheets filo pastry
- 1 tablespoon sunflower oil
- 6 oz redcurrants
- 9 fl oz Greek style yogurt
- 1 teaspoon icing sugar
Preparation (instructions)
- Preheat the oven to 400 degree F.
- Cut the sheets of filo pastry into 18 squares.
- Brush filo squares light with oil.
- Arrange 3 squares in each hole of a 6-hole muffin tin.
- Place each one at a different angle to form star-shaped baskets.
- Bake for 7 minutes until crisp.
- Lift baskets out carefully and set aside to cool.
- In a bowl, mix well redcurrants and yogurt.
- Spoon mixture into filo baskets.
- Dust with icing sugar and serve.
