Redcurrant filo basket recipe

Ingredients (nutrition)

  • 3 sheets filo pastry
  • 1 tablespoon sunflower oil
  • 6 oz redcurrants
  • 9 fl oz Greek style yogurt
  • 1 teaspoon icing sugar

Preparation (instructions)

  1. Preheat the oven to 400 degree F.
  2. Cut the sheets of filo pastry into 18 squares.
  3. Brush filo squares light with oil.
  4. Arrange 3 squares in each hole of a 6-hole muffin tin.
  5. Place each one at a different angle to form star-shaped baskets.
  6. Bake for 7 minutes until crisp.
  7. Lift baskets out carefully and set aside to cool.
  8. In a bowl, mix well redcurrants and yogurt.
  9. Spoon mixture into filo baskets.
  10. Dust with icing sugar and serve.
