Rum & raisin ice cream recipe

Ingredients (nutrition)

  • 9 oz raisins
  • 3 1/2 fl oz dark rum
  • 5 egg yolks
  • 3 tablespoons golden syrup
  • 1 tablespoon treacle
  • 1 pt whipped double cream

Preparation (instructions)

  1. In a saucepan, add raisins and rum.
  2. Bring to boil, remove from heat and set aside.
  3. In a bowl, whisk egg yolks, syrup and treacle for 3 1/2 minutes with a hand held electric mixer.
  4. Stir in whipped double cream and whisk for another 3 1/2 minutes.
  5. Pour cream mixture into a roasting tin and freeze for 1 1/2 hours.
  6. Pour in soaked fruit and liquid into ice cream, mix well and return to freezer for 3 hours prior serving.
