Ingredients (nutrition)
- 9 oz raisins
- 3 1/2 fl oz dark rum
- 5 egg yolks
- 3 tablespoons golden syrup
- 1 tablespoon treacle
- 1 pt whipped double cream
Preparation (instructions)
- In a saucepan, add raisins and rum.
- Bring to boil, remove from heat and set aside.
- In a bowl, whisk egg yolks, syrup and treacle for 3 1/2 minutes with a hand held electric mixer.
- Stir in whipped double cream and whisk for another 3 1/2 minutes.
- Pour cream mixture into a roasting tin and freeze for 1 1/2 hours.
- Pour in soaked fruit and liquid into ice cream, mix well and return to freezer for 3 hours prior serving.
