Strawberry & raspberry parfait recipe

Ingredients (nutrition)

  • 3 oz strawberry jelly crystals
  • 3/4 pt boiling water
  • 9 oz chopped strawberries
  • 1 lb 2oz vanilla ice cream
  • 4 oz raspberries

Preparation (instructions)

  1. In a bowl, combine jelly crystals with boiling water.
  2. Stir until crystals dissolves and chill in refrigerator until set.
  3. Add 4 oz strawberries in a food processor or a blender and puree until smooth.
  4. Layer jelly, ice cream, strawberries, raspberries and strawberry puree in serving parfait glasses.
  5. Serve at once.
