Tapioca pudding recipe

Ingredients (nutrition)

  • 2 oz tapioca
  • 4 fl oz cold milk
  • 1 pt hot milk
  • 2 eggs
  • 3 oz sugar
  • pinch of salt
  • 1 teaspoon vanilla essence

Preparation (instructions)

  1. In a bowl, soak tapioca in cold milk for 12 minutes and transfer to a large saucepan.
  2. Pour in hot milk and cook until translucent.
  3. Whisk in egg yolks, sugar and salt. Cook until milk mixture thickens.
  4. In a bowl, beat egg whites until stiff.
  5. Add egg whites and vanilla essence into milk mixture.
  6. Transfer hot mixture into a pudding mould and refrigerate for 4 hours prior serving.
