Ingredients (nutrition)
- 2 oz tapioca
- 4 fl oz cold milk
- 1 pt hot milk
- 2 eggs
- 3 oz sugar
- pinch of salt
- 1 teaspoon vanilla essence
Preparation (instructions)
- In a bowl, soak tapioca in cold milk for 12 minutes and transfer to a large saucepan.
- Pour in hot milk and cook until translucent.
- Whisk in egg yolks, sugar and salt. Cook until milk mixture thickens.
- In a bowl, beat egg whites until stiff.
- Add egg whites and vanilla essence into milk mixture.
- Transfer hot mixture into a pudding mould and refrigerate for 4 hours prior serving.
