Ingredients (nutrition)
- 18 fl oz espresso coffee
- 2 fl oz Marsala wine
- 2 eggs
- 2 oz caster sugar
- 8 oz mascarpone cheese
- 8 fl oz double cream
- 18 savoiardi (sponge finger biscuits)
- 1 1/2 tablespoons dark cocoa powder
Preparation (instructions)
- In a bowl, mix well coffee and wine. Set aside.
- In a separate bowl, whisk egg yolks and sugar until light and fluffy with an electric hand held mixer.
- Add cheese and mix well.
- Whisk cream until form soft peaks and fold into cheese mixture.
- In a separate bowl, whisk egg whites until form soft peaks and fold into cheese mixture.
- Dip finger cookies into coffee-wine mixture, spread with mascarpone cheese-cream mixture and dust with cocoa powder.
- Refrigerate for at least 8 hours prior serving.
