Tuscan pudding recipe

Ingredients (nutrition)

  • 1/2 oz butter
  • 9 oz ricotta cheese
  • 3 egg yolks
  • 2 oz caster sugar
  • 1 teaspoon ground cinnamon
  • grated zest of 1 orange
  • 3 oz mixed dried fruits soaked with warm water

Preparation (instructions)

  1. Preheat the oven to 350 degree F.
  2. Grease 4 ramekins or small pudding moulds with some butter.
  3. In a bowl, whisk cheese, egg yolks, sugar, cinnamon and zest.
  4. Drain dried fruits and combine together in the cheese mixture.
  5. Transfer mixture into ramekins or moulds.
  6. Bake for 13-15 minutes.
  7. Allow to cool and chill in refrigerator for 24 hours prior serving.
