Vanilla ice cream recipe

Ingredients (nutrition)

  • 1 pt double cream
  • 1 vanilla pod, split lengthways
  • zest of 1 lemon
  • 6 lightly beaten egg yolks
  • 4 lightly beaten egg whites
  • 6 oz caster sugar

Preparation (instructions)

  1. In a saucepan under low heat, add cream and whisk continuously.
  2. Add vanilla pod, lemon zest, egg yolks and egg whites.
  3. Bring to boil, reduce heat and cook for 9 minutes while continue to whisk until mixture thickens.
  4. Add sugar, mix well and set aside to cool.
  5. Strain mixture into a freezer container and freeze for 24 hours before serving.
