Ingredients (nutrition)
- 1 pt double cream
- 1 vanilla pod, split lengthways
- zest of 1 lemon
- 6 lightly beaten egg yolks
- 4 lightly beaten egg whites
- 6 oz caster sugar
Preparation (instructions)
- In a saucepan under low heat, add cream and whisk continuously.
- Add vanilla pod, lemon zest, egg yolks and egg whites.
- Bring to boil, reduce heat and cook for 9 minutes while continue to whisk until mixture thickens.
- Add sugar, mix well and set aside to cool.
- Strain mixture into a freezer container and freeze for 24 hours before serving.
