Yogurt ring with tropical fruit recipe

Ingredients (nutrition)

  • 6 fl oz tropical fruit juice
  • 1 tablespoon powdered gelatin
  • 3 egg whites
  • 5 oz low fat Greek style yogurt
  • grated zest and juice of 1 lime
  • 1 diced mango
  • 2 sliced kiwi fruits
  • 12 cape gooseberries, cut into halves

Preparation (instructions)

  1. Add fruit juice and gelatin in a saucepan and heat until gelatin dissolves.
  2. In a bowl, whisk egg whites until it forms stiff peaks.
  3. Add yogurt, lime zest in the egg whites and pour in the hot gelatin saucepan.
  4. Mix well and pour in a ring mould.
  5. Chill in fridge for 4 hours.
  6. In a bowl, toss mango cubes, sliced kiwi fruits and gooseberries in lime juice.
  7. Invert jelly in a serving plate and add fruits all around.
  8. Serve immediately.
