Apple & blackcurrant pancakes recipe

Ingredients (nutrition)

For Pancake Batter

  • 4 oz plain wholemeal flour
  • 10 fl oz skimmed milk
  • 1 1/4 tablespoons sunflower oil
  • 1 lightly beaten egg

For Filling

  • 1 lb peeled and sliced cooking apples
  • 8 1/2 oz blackcurrants
  • 2 tablespoons water
  • 1 oz Demerara sugar

Preparation (instructions)

  1. To make pancake batter, add flour in a large mixing bowl and make a well in the centre.
  2. In a separate bowl, whisk milk, oil and egg until well mix.
  3. Pour into the well and beat gently until batter is smooth and creamy.
  4. Cover with cling film and chill in the refrigerator until needed.
  5. In a saucepan, add apples, blackcurrants and water.
  6. Cook under low-medium heat for 13-16 minutes and add in sugar.
  7. Cook until sugar caramelized.
  8. In a non stick pan, lightly grease pan with butter and pour 2 1/2 tablespoons batter and twirl around.
  9. Cook for about 50 seconds and flip pancake to cook the other side.
  10. Spread apple and blackcurrant mixture onto pancake and roll up.
  11. Serve immediately.
