Ingredients (nutrition)
- 2 lb peeled and sliced apples
- 4 oz caster sugar
- 5 oz butter
- 3 1/2 tablespoons water
- juice of 1 lemon
- 2 1/2 tablespoons apricot jam
- 8 slices white bread
- 5 scoops vanilla ice cream
Preparation (instructions)
- Preheat oven to 350 degree F.
- In a saucepan, add apples, sugar, 1 oz butter and water.
- Cover and simmer gently under low heat for 8-12 minutes.
- Uncover, stir, increase heat and cook until form a thick and smooth puree.
- Pour in lemon juice and stir in apricot jam. Set aside.
- Spread remaining butter on bread slices and cut into thin strips.
- Lightly grease souffle dish with some butter and line half the amount of bread strips.
- Pour in apple puree and top with remaining bread strips.
- Place dish on a baking tray and bake in preheated oven for 32 minutes.
- Allow to cool slightly before invert onto a serving plate.
- Cut into pieces and serve with vanilla ice cream.
