Apple couscous pudding recipe

Ingredients (nutrition)

  • 1 pt unsweetened apple juice
  • 4 oz couscous
  • 2 oz sultanas
  • 3/4 teaspoon mixed spice
  • 2 sliced cooking apples
  • 1 1/2 tablespoons Demerara sugar

Preparation (instructions)

  1. Preheat the oven to 400 degree F.
  2. In a saucepan, add apple juice, couscous, sultanas and mixed spice.
  3. Bring to boil with constant stirring, reduce heat, cover and simmer gently for 6 minutes.
  4. Transfer half of the couscous mixture into an ovenproof dish and add half the amount of apple slices.
  5. Layer remaining couscous and apple slices.
  6. Top with sugar and bake in preheated oven for 28 minutes.
  7. Serve immediately.
