Ingredients (nutrition)
- 1 pt unsweetened apple juice
- 4 oz couscous
- 2 oz sultanas
- 3/4 teaspoon mixed spice
- 2 sliced cooking apples
- 1 1/2 tablespoons Demerara sugar
Preparation (instructions)
- Preheat the oven to 400 degree F.
- In a saucepan, add apple juice, couscous, sultanas and mixed spice.
- Bring to boil with constant stirring, reduce heat, cover and simmer gently for 6 minutes.
- Transfer half of the couscous mixture into an ovenproof dish and add half the amount of apple slices.
- Layer remaining couscous and apple slices.
- Top with sugar and bake in preheated oven for 28 minutes.
- Serve immediately.
