Ingredients (nutrition)
For Apple Omelette
- 4 chopped tart apples
- cider to cover apples
- 1/2 cup sugar
- 1 teaspoon grated nutmeg
- 4 well beaten eggs
- 1 tablespoon butter
For Cider Sauce
- 1 cup reserved juices from cooking apples
- 1 cup cider
- 1 1/2 tablespoons sugar
- 1 tablespoon butter
- 1 tablespoon flour
Preparation (instructions)
- In a saucepan, cook apples with cider until soft.
- Strain and reserve juices.
- Press apple through a sieve to make puree.
- Add sugar and nutmeg into apple puree. Set aside to cool.
- Preheat oven to 250 degree F.
- Beat eggs into apple puree when it is cooled.
- Grease baking dish with butter and pour in apple mixture.
- Bake in preheated oven for 20 minutes.
- To make the cider sauce, mix well reserved apple juice and cider in a saucepan under high heat for 2 minutes.
- Add in sugar, butter and flour.
- Whisk continuously under medium heat until sauce thickens.
- Serve sauce with apple omelette.
