Apple omelette with cider sauce recipe

Ingredients (nutrition)

For Apple Omelette

  • 4 chopped tart apples
  • cider to cover apples
  • 1/2 cup sugar
  • 1 teaspoon grated nutmeg
  • 4 well beaten eggs
  • 1 tablespoon butter

For Cider Sauce

  • 1 cup reserved juices from cooking apples
  • 1 cup cider
  • 1 1/2 tablespoons sugar
  • 1 tablespoon butter
  • 1 tablespoon flour

Preparation (instructions)

  1. In a saucepan, cook apples with cider until soft.
  2. Strain and reserve juices.
  3. Press apple through a sieve to make puree.
  4. Add sugar and nutmeg into apple puree. Set aside to cool.
  5. Preheat oven to 250 degree F.
  6. Beat eggs into apple puree when it is cooled.
  7. Grease baking dish with butter and pour in apple mixture.
  8. Bake in preheated oven for 20 minutes.
  9. To make the cider sauce, mix well reserved apple juice and cider in a saucepan under high heat for 2 minutes.
  10. Add in sugar, butter and flour.
  11. Whisk continuously under medium heat until sauce thickens.
  12. Serve sauce with apple omelette.
